Ingredients

Chicken: Organic shredded chicken works best. You can pre-cook chicken breasts in the Instant Pot, slow cooker, or oven, or use an organic rotisserie chicken for convenience.
Fage 5% Greek Yogurt: This brand gives a thick, creamy texture similar to cream cheese, with more protein and no fillers. It's key for the sauce.
Cheese: Shred organic block cheese at home to avoid added starches in pre-shredded cheese. Colby Jack, Monterey Jack, Sharp Cheddar, or Mexican blend work great.
Buffalo Sauce: Choose a clean, sugar-free buffalo sauce such as Primal Kitchen to keep this casserole keto and low-carb.
Variations & Tips
Vegetarian Option: Swap the shredded chicken for tempeh or jackfruit for a plant-based version that still holds flavor and texture.
Buffalo-Free Version: If you prefer a classic creamy chicken and broccoli casserole, replace the buffalo sauce with bone broth, chicken broth, or unsweetened almond milk, then season to taste with garlic powder, onion powder, thyme, or rosemary.
Cauliflower Swaps: If you're not a cauliflower fan, use cauliflower rice, spaghetti squash, or zucchini noodles. For a non-keto option, wild rice works too. Check out my article on how to cook spaghetti squash!
For More Texture: If you like your cauliflower crispier, roast it in the oven first and stir it in when adding the cheese and yogurt. (I love this texture).

How to Make Keto Instant Pot Chicken Broccoli Casserole

Step 1: Add cooked chicken, broccoli, cauliflower, and buffalo sauce to your Instant Pot. Set the pressure cooker setting to high pressure for 1 minute. Quick release the pressure immediately.

Step 2: Stir in yogurt and half of the cheese until it melts slightly.

Step 3: Scoop into a casserole dish.

Step 4: Broil the casserole for 2-3 minutes until the cheese melts. Garnish with chives. Enjoy!
Hint: The reason we add the cheese and yogurt after the pressure cooker is that the cheese will melt and stick to the bottom of the Instant Pot.
The IP's self-preservation mode will beep and say food burn. This will not allow the pot to come to pressure, and this hiccup may confuse the cooking time! So it's best to add the cheese after releasing the pressure.
Keto Instant Pot Chicken Broccoli Casserole FAQs
While broccoli is not free from carbohydrates, it has a very small amount. A single cup of cooked broccoli has just 2-3 g net carbs. The micronutrients, phytonutrients, and minerals make it a perfect superfood addition to any low-carb recipe or diet!
The carbs in broccoli are non-starchy and paired with healthy fiber and nutrients. The minimal amount of carbs does not need to be counted as the benefits highly outweigh the numbers on the nutrition facts. Many experts believe that eating as much broccoli as you want should not break ketosis if that is your goal.
This depends on the person. Some need 15g of carbs, and others can do 30 or even 50g of carbs per day to stay in ketosis. This is the general rule that keeps one in a state of ketosis, where the body burns fat for energy instead of carbohydrates.
