This Keto Spinach Artichoke Chicken Casserole has all the flavor of the classic spinach artichoke dip baked into a wholesome casserole topped with mozzarella and a crispy gluten-free parmesan crust. You won't even notice it is gluten-free and low-carb!
This keto casserole is so delicious combining two of my favorite things: spinach artichoke dip and a crispy and cheesy chicken casserole. Keeping it low carb, we incorporate cauliflower for the filling and. almond flour for the crispy topping. I love inventing new keto casseroles that satisfy the whole family!

Cream Cheese: Opt for organic, full-fat cream cheese with minimal ingredients for the best quality.
Parmesan Cheese: Parmesan, especially when aged and of high quality enhances flavor and provides calcium and protein. Look for Parmesan with a short ingredient list, signifying less processing.
Spinach: Fresh spinach is packed with vitamins and iron. Organic is best.
Artichoke Hearts: They are high in fiber and antioxidants. Select artichoke hearts that are jarred in water or brine with minimal additives.
Almond Flour: Almond flour is one of my favorite options for breadcrumb alternatives. Most keto recipes use pork rinds in place of panko bread crumbs, but I prefer this option.

Vegetarian Option: Replace the chicken with a plant-based protein like tofu or tempeh for a vegetarian twist.
Extra Spice: For those who enjoy a bit of heat, consider adding red pepper flakes or diced jalapeños to the artichoke mixture.
Turn It Into a Dip: By adjusting the consistency with a bit more yogurt, sour cream, or heavy cream, you can transform this casserole into a rich, creamy dip. Serve it with vegetable sticks or low-carb crackers for an entertaining and crowd-pleasing appetizer.
Cream Cheese Alternative: For a lighter version, omit the cream cheese and use FAGE 5% Greek yogurt instead. Its thickness is akin to cream cheese and maintains the creamy consistency of the dish.
How to Make Keto Spinach Artichoke Chicken Casserole
Step 1: Preheat oven to 400°F (200°C). Coat the cauliflower florets with avocado oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes. Once done, remember to reduce the oven temperature to 350°F (175°C) for the next steps.
Step 2: In a large skillet, warm avocado oil over medium heat. Add garlic and onion, cooking them for about 2 minutes. Follow this by adding fresh spinach to the skillet, and sautéing until it wilts, about 5 more minutes.
Step 3: In a large mixing bowl combine your cooked chicken, cream cheese, yogurt, half of the Parmesan cheese, half of the mozzarella cheese, artichoke hearts, the sautéed spinach mixture, and the roasted cauliflower. Season with 1 teaspoon of Italian seasoning, sea salt, and black pepper.
Step 4: Carefully transfer this mixture into your baking dish, spreading it out to create an even layer.
Step 5: In a small bowl, mix the remaining mozzarella cheese and Parmesan with almond flour and Italian seasoning.
Step 6: Gently sprinkle this cheese and almond flour mixture over the top of the chicken mixture in the casserole dish.
Step 7: Bake the casserole in the oven at 350 for 20 minutes. For 1-2 minutes, switch your oven to broil and let the casserole brown briefly. Keep an eye on it to ensure it doesn't burn.
Step 8: Garnish the casserole with parsley and serve it warm.
Hint: For easier mixing, let the cream cheese reach room temperature before adding it to the artichoke mixture. Alternatively, gently warm it in a skillet over medium-low heat until it softens. This ensures a smoother, creamier texture in your chicken artichoke bake.

Ingredients
- 2 cups cauliflower florets
- 2 cups shredded cooked chicken rotisserie or homemade
- 1 cup cream cheese softened
- 1 ½ cups shredded mozzarella cheese divided
- 1 cup full-fat Greek yogurt
- ½ cup grated Parmesan cheese divided
- 5 oz fresh spinach
- 1 cup artichoke hearts drained and chopped
- 2 tablespoon avocado oil
- 2 cloves garlic minced
- 1 medium onion chopped
- 1 ½ teaspoon Italian seasoning divided
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- ¼ cup almond flour
- Dried parsley for garnish
- Red pepper flakes for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss cauliflower with avocado oil, salt, and pepper; roast on a baking sheet for 20-25 minutes. Lower oven temperature to 350°F (175°C).
- Heat avocado oil in a skillet over medium heat. Sauté garlic and onion for 2 minutes, then add spinach and cook until wilted.
- In a large bowl, combine chicken, cream cheese, half the mozzarella and parmesan, Greek yogurt, drained and chopped artichokes, spinach mixture, roasted cauliflower, 1 teaspoon Italian seasoning, salt, and pepper.
- Transfer the mixture to the casserole dish.
- Mix remaining mozzarella and parmsan with almond flour and remaining Italian seasoning for the topping in a small bowl. Sprinkle over the casserole.
- Bake for 20 minutes. Broil for 1 minute to brown the top.
- Garnish with dried parsley and red pepper flakes. Serve warm.
