Cooked Chicken: Buy a pre-cooked organic rotisserie chicken and shred it up for easy and quick use. Otherwise, get boneless skinless chicken thighs or breasts and cook them in the Instant Pot or slow cooker, and shred.
Avocado Oil: I use this oil because it has a high smoke point. Check out this helpful article, Avocado Oil vs Coconut Oil for Cooking.
Bell Peppers: For a colorful meal with a variety of phytonutrients, we recommend getting one of each color- a red, yellow, orange, and green bell pepper! Organic is best.
Fage 5% yogurt: This full-fat yogurt is a brand I trust. It also adds a thick and creamy consistency that is similar to cream cheese.
Shredded Cheese: Either Monterey Jack or Mexican Blend works well. Be sure to get organic cheese and check the ingredients. It's best to get a block of cheese to shred to avoid hidden starches (carbs!).

Substitutions & Tips
For a vegetarian version, use jackfruit instead of chicken, or add black beans and skip the chicken.
No diced tomatoes with green chilies? Use about 1 cup of salsa.
Cream cheese, sour cream, or full-fat yogurt all work to create the creamy base.
You can use a store-bought fajita seasoning packet if needed - just check ingredients for clean, simple spices.
If you're not strictly low-carb, serve with sprouted-grain or organic tortillas. Low-carb tortillas are also an option.
How to Make Keto Chicken Fajita Casserole

Step 1: Set oven to 350°F. Place shredded chicken in a large bowl. Heat oil in a large skillet and saute sliced peppers and onions.

Step 2: Add sauteed onions and peppers to the chicken bowl and stir.

Step 3: In a separate bowl, mix together the can of diced tomatoes with yogurt, half of the shredded cheese (1 cup), and all of the seasonings.

Step 4: Combine the sauce mixture with the chicken mixture and mix together well. Pour the mixture into a medium casserole dish or baking dish and evenly top it with the remaining cup of cheese. Place in the oven for 20-25 minutes or until cheese is melted and starting to brown.

Step 5: Let cool for 1 minute and serve with your choice of toppings. Enjoy!
Hint: If you use a cast-iron skillet to saute the veggies, you can transfer the mixture back into that and put it in the oven to save on clean-up!

Clean Keto Chicken Fajita Casserole

Ingredients
- 3 cups shredded chicken
- 1 teaspoon avocado oil
- 4 bell peppers (one red, yellow, orange, and green) cut into thin strips
- 1 small yellow onion thin short slices
- 1 can diced tomatoes with green chilies
- 5 oz full fat yogurt Fage 5%
- 2 cup Monterey Jack or Mexican style cheese shredded and divided
- 1.5-2 teaspoon chipotle Chile powder
- ½ teaspoon pink Himalayan salt
- ½ teaspoon smoked paprika
- ¼ teaspoon black pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon oregano
- ½ teaspoon ground cumin
- ⅛ teaspoon cayenne powder
- 1 pinch pure monk fruit powder (optional)
- Diced Avocados, Greek yogurt, lime wedges, freshly diced tomatoes optional toppings
Instructions
- Preheat oven to 350 F place shredded chicken in a large bowl, set aside. Heat avocado oil in large skillet over medium heat until oil glistens. Add sliced peppers and onions. Sauté for 5-7 min or until softened.
- Remove from heat and toss in with the shredded chicken and set aside.
- In a medium bowl mix together fage 5% Greek yogurt, crushed tomatoes, all of the powdered seasonings, 1 cup shredded cheese and stir to combine.
- Add the sauce mixture to the chicken mixture and stir together. Place the entire fajita mix together in a casserole dish and top with the remaining shredded cheese. Place in the oven for 25-30 min until cheese is slightly golden and melted. Let cool for 1 min. Garnish with cilantro and top with your choice of toppings. Serve warm.
Notes
- For extra creaminess, stir in full-fat Greek yogurt or cream cheese.
- If you're not low-carb, serve with sprouted-grain tortillas or use low-carb tortillas.
- Adjust the heat by adding more or less chili powder or cayenne.
- Bake the casserole ahead, let it cool, then refrigerate for easy weeknight reheats.
- Cook chicken breast in a slow cooker or Instant Pot and shred to make your own chicken. I used a rotisserie in this recipe for convenience.
