Ingredients
Cucumbers: Cucumbers have a multitude of nutrients and high water content that helps multiple systems in the body. They are a low-calorie food that is packed with vitamins and nutrients like vitamin K. For the best quality, choose organic cucumbers; due to their thin skin, they may be more susceptible to pesticides.
Ginger: This powerful root is anti-inflammatory and aids digestion. It’s great for adding a spicy kick to your juice. Opt for organic ginger to avoid pesticides.
Mint Leaves: Mint aids digestion, improves cognitive function, reduces cold symptoms, and has calming effects that can benefit mental health. It is packed with antioxidants that fight free radicals. It is a perfect addition to an anti-cancer diet! Fresh, organic mint is ideal for its health benefits.
Green Apples: Green apples are rich in liver-protective antioxidants, help balance blood sugar, and support healthy skin and heart health. Choose organic green apples to avoid pesticides.
Lime: Limes prevent kidney stones, improve immunity, support healthy skin, and aid iron absorption. Organic lime juice is packed with vitamin C and other essential vitamins and nutrients.
Lemon: Lemon juice boosts energy, strengthens the immune system, and stimulates bile production for better digestion.
Using fresh, organic, and high-quality ingredients ensures you get the most nutritional benefits from your juice, supporting your weight loss journey and overall health.

Instructions
- Wash, Cut, and Peel Ingredients:
- Wash all produce thoroughly.
- Cut the cucumbers, green apple, lemon, and lime into smaller pieces or small chunks.
- Peel the ginger and citrus fruits.
- Hint: Use a 1:1 white vinegar and clean water solution to clean the produce. I use a spray bottle, leave it on for one minute, then rinse it off.
- Juice the Ginger, Cucumber, and Apple:
- Start by juicing the ginger, followed by the whole cucumber cut into pieces, and then the apple chunks.
- Use the tamper to ensure all produce makes it clear through the juicer.
- Juice the Lemon, Lime, and Mint:
- Juice the lemon and lime pieces, followed by the fresh mint leaves.
- Again, use the tamper between each veggie/fruit to make sure everything is juiced properly.
- Stir and Serve:
- Stir the juice well to combine all the flavors.
- Carefully pour the juice into a tall glass. Add ice cubes if desired.
Hint: If you do not have a juicer, use a food processor or blender. After blending, strain the mixture through a nut milk bag or fine mesh sieve to remove the pulp.
By following these steps, you can enjoy a refreshing and nutrient-packed juice, regardless of the different equipment you have on hand.
Substitutions and Variations
Feel free to customize this recipe to suit your preferences and dietary needs:
- Herb Substitutes: Swap mint for parsley, cilantro, or basil to change the flavor profile of your juice.
- Sweetness: For sweeter juice, add raw honey or use a sweeter apple variety like Fuji or Gala.
- Cucumber Options: Use English cucumbers or Persian cucumbers for a slightly different taste.
- Celery: Add celery for extra anti-inflammatory and hydration benefits, or swap it for cucumber.
- Eliminations: If you dislike any ingredient, feel free to eliminate it or substitute it with another you prefer.
- Cucumber Water: Instead of juicing consider making cucumber water. Add cucumber slices, fresh mint, lime, and lemon to your water jug and sip on it throughout the day!
These substitutions and variations can help you create a juice that fits your taste and dietary goals. Enjoy experimenting with different combinations!
Storage
To preserve the freshness and nutritional benefits of your cucumber juice:
- Refrigeration: Store the juice in an airtight container in the refrigerator. It’s best consumed immediately or within 24 hours, but it can last up to 48 hours if kept chilled.
- Freezing: For longer storage, pour the juice into ice cube trays and freeze. Once frozen, transfer the cubes to a freezer-safe bag. Thaw and enjoy.
- Tip: Always shake or stir the juice before drinking to mix any settling.
Proper storage ensures you enjoy the full health benefits of your homemade cucumber juice.
Top Tips
Chew your juice. Yes, you heard me correctly! Instead of chugging, sip slowly and hold the juice in your mouth, making a chewing motion to stimulate the production of amylase in your saliva. Chewing your juice helps to break it down and become more bioavailable, allowing you to get the most nutrients from your juice. This simple practice enhances digestion and maximizes the health benefits of your nutrient-rich juices.
It is most beneficial when you drink juice on an empty stomach! That way it does not have to compete with any other digestive processes going on at the same time and can absorb more quickly into your body.
FAQ
In the Morning. The best time to drink cucumber juice is in the morning on an empty stomach. This helps kickstart your metabolism, aids in detoxification, and keeps you hydrated throughout the day. You can also enjoy it before meals to help control your appetite and boost digestion.
Yes, it's okay to drink cucumber juice every day. This healthy drink is hydrating, low in calories, and packed with essential vitamins and minerals. Incorporating this green juice into your daily routine can aid in digestion, help flush out toxins, and provide a steady supply of nutrients. However, as with any healthy juice recipe, it's important to maintain a balanced diet and consult with your primary care provider if you have any health conditions or are on a special diet.
Drinking water immediately after eating cucumber can dilute stomach acids, potentially slowing down the digestive process. This can lead to bloating and discomfort. It's best to wait at least 30 minutes after consuming cucumber or cucumber juice before drinking water to allow proper digestion and maximize the absorption of nutrients.
