Frozen Pineapple: This tropical fruit is high in vitamin C and an enzyme called bromelain. Pineapple adds a natural sweetness to the smoothie. Using frozen pineapple helps create a thick, cold consistency.
Fresh Lime Juice: Adding a splash of fresh lime juice enhances the tropical flavor and provides a boost of vitamin C. Always opt for fresh lime juice for the best taste and nutrients.
Baby Spinach: Organic baby spinach is a great source of vitamins and minerals, including iron and vitamin K. You can use fresh or frozen spinach, but organic fresh spinach is preferred for maximum nutrient retention.
Maple Syrup: Pure maple syrup is the best choice for adding a touch of sweetness. It’s a natural sweetener that contains antioxidants and minerals. Use it sparingly to keep the smoothie healthy and delicious.
Instructions
- Initial Blend: Add ½ cup of coconut milk, frozen pineapple chunks, avocado, fresh spinach, and lime juice to a high-speed blender. Blend on high until the mixture is mostly smooth.
- Scrape and Adjust Consistency: Scrape down the sides of the blender. If it is too thin, add ice cubes and blend again. If the smoothie is too thick, add more coconut milk a little at a time until you reach your desired consistency.
- Adjust Flavors and Sweetness: Taste the smoothie. If needed, adjust the sweetness by adding honey or maple syrup to taste. Blend again briefly to mix in any additional sweetener.
- Serve: Pour the smoothie into a glass. Garnish with a pineapple slice, lime wheel, or a sprinkle of shredded coconut, if desired.
Hint: Using a High-Speed Blender is ideal. If you are working with a standard blender, be sure to slowly add ingredients starting with the liquid and soft ingredients first and frozen fruit last.
Substitutions and Variations
Coconut Flavor Options: Substitute coconut milk with coconut water for a lighter version. This will give a more refreshing taste and still provide that tropical flavor.
Sweetener: For a sweeter smoothie, you can use additional maple syrup or raw honey. For a keto sweetener try monk fruit instead of maple syrup. Monk fruit is a great natural, low-calorie sweetener.
Pineapple: Freeze your own pineapple cores and add them to the smoothie. Pineapple cores have the highest concentration of bromelain. We use a pineapple corer when eating fresh pineapple and then freeze the core for smoothies!
Spinach: Substitute with or add kale or another leafy green for a different nutrient profile.
Lime juice: For a more tangy flavor, add extra lime juice or a splash of lemon juice.
Avocado: If you don't have avocado, a great option is to use a banana for its creamy texture and natural sweetness.
Storage
To store your Avocolada smoothie, pour any leftovers into an airtight container or a mason jar with a lid. Refrigerate for up to 24 hours.
Before drinking, give it a good shake or stir, as separation may occur.
