Ingredients: Ground Turkey Avocado Oil Onion Garlic Celery Spinach Carrots Quinoa Chicken Broth Buffalo Sauce Greek Yogurt Crumbled Blue Cheese

Soak quinoa for 3 hours. Boil 1.5 cups liquid (broth or water).  Add quinoa, simmer for 8 minutes.  Let steam for 3-5 minutes.  Fluff with fork. Prepare vegetables while quinoa cooks.

Heat oil in skillet. Sauté garlic, onions, celery for 2-3 mins.  Add turkey, buffalo sauce, cook until brown & 165F.   Stir in carrots, spinach until wilted. Remove from heat.

Stir Greek yogurt and 2 TB buffalo sauce in a small bowl.

Add turkey stir-fry to quinoa in a bowl and top with yogurt buffalo sauce and Blue cheese, if desired. Serve immediately. Enjoy!
